The Owners Behind Roots

Our History Began in Cartagena, Colombia

The owners of Roots Coffee & Co., Ginalen Soto and McKenzie Packard, were sitting at a local coffee joint in Cartagena, Colombia when they first decided to open a shop of their own. Their love and appreciation for coffee had grown after visiting and experiencing various coffee shops in over 15 countries combined and almost all states within the U.S. They wanted to pull and share their experiences from every shop and put them into one concept.

In 2020, Soto and Packard decided to pursue their concept and began designing a business plan, initiate their search for distributors, and the perfect location. After viewing several spaces in Salt Lake City, they came across the building in the Granary District which offered Salt Lake’s unforgettable charm along with the special features both owners were looking for to make Roots Coffee & Co. Both owners continue to travel around the world together to bring new flavors to the heart of Utah.

Every aspect of Roots Coffee & Co. has been designed with the customer experience in mind. From the chic, industrial interior, to the delicious menu crafted from flavors around the world, Roots Coffee transports its customers and makes them feel completely at home and welcomed all at once.

In addition to their unique line-up of original signature drinks, Roots Coffee & Co. is proud to be able to support and partner with two local roasters: Millcreek Coffee Roasters and Pando Coffee—both with over 40 years of combined coffee roasting experience. All drink recipes consist of seasonal Single Origin Drip Coffees, and Espresso Blends along with decaf and tea options.
